Whisk together the cinnamon, brown sugar, baking powder, and salt in a medium basin. Whisk together the eggs, oil, and milk in a small basin.



Mix the dry and wet ingredients together gently, ensuring that the mixture is scarcely combined (a few small lumps are acceptable). Fold the grated apple in gently.


Bring a saute pan or griddle to a medium temperature. Cook the pancakes, utilizing a quarter-cup scoop, for three to four minutes, or until bubbles appear on the surface, over a heated griddle. Cook for an additional 1 to 2 minutes, turning once, or until thoroughly cooked.


Warm before topping with butter and maple syrup.
