Two tablespoons of extra virgin olive oil 2 medium sweet potatoes, diced into bite-sized pieces with the peel on 1 potato, sweet, white, divided into bite-sized pieces 1/2 teaspoon of kosher salt 1/2 teaspoon pepper, black 2 teaspoonful garlic, minced 1/2 chopped red bell pepper 1/2 chopped green bell pepper garlic salt (accompanied by parsley flakes) Four eggs combined with half a cup of cheddar 


Step - 1

Olive oil is heated in a large skillet over medium-high heat.  

Incorporate the potatoes, season with salt and pepper.    

Step - 2

Reduce the heat, cover, and simmer the pan for 15 minutes. Stir every four to five minutes. Potatoes should be cooked until nearly tender.  

Step - 3

After removing the lid and increasing the heat to high, combine the eggs, bell peppers, and garlic. Continue cooking for an additional five minutes, or until the potatoes are tender and browned and the eggs are cooked.  

Step - 4

Subsequently, incorporate the cheese and serve.
